Getting Ready

Food / Musings

Getting snacks ready for this weekends four day tournament. Used leftover veggies and grilled chicken to make these yummy and healthy salads in a jar. The trick is to layer the dressing/vinaigrette at the bottom and keep the greens on top. This way the greens do not wilt or become soggy. The salad will keep fresh for about four days.

I ran across this Gluten-Free Chicken Ramen Noodle Soup recipe on Pinterst and knew immediately I had to try it. After running to Whole Foods for a few missing items I kicked everyone out of the kitchen and went to work.  The recipe is very straightforward and easy to follow. Love all the tips on where to find food items and great substitution suggestions. The soup was delicious, and since the recipe makes four servings […]

Link: Gluten Free Raspberry Muffins Recipe As I shared prior I recently had to switch to Gluten-Free diet due to a gluten intolerance (which I was unaware of and suffering miserbly for quite some time). The hardest part has been adjusting and making time to,plan my meals (as well as the family’s) well in advance, especially when we are away on tournament weekends. I thought as Im certain I am not the only mom going through this, […]

Eating On The Road

A constant dilemma moms find themselves in on game days is what to feed the family that is fast AND healthy. Many times you find yourself in the car starving, with only fast food options. Here are some suggestions on where and how to make healthier food choices when fast food is your only option. McDonald’s Salads: Take it easy on the dressing, get the grilled chicken versus the breaded chicken. Hamburger (240 calories) and […]

Food On The Go

As my son gets older, I find myself planning dinner on the go more often. With baseball practice, basketball practice, and other evening activities throughout the year, sometimes my family can’t sit together around a table at dinnertime. Even though we can’t always be together for dinner in our own kitchen, I still like to know that we’re all eating nutritious food. I’ve come up with several meals that can be easily eaten in the […]

Menu Planning

Making a meal plan, buying the right ingredients and cooking the meals is one of the best ways to keep your budget on track and create inexpensive healthy meals. By making a meal plan you are eliminating waste and saving a lot of wasted time trying to figure out “what to make for dinner”.   In the first column I list ingredients I need to pick up at the grocery store. In the second column I […]

Menu Planning

If I plan my meals ahead of time my trip to the grocery store is so much quicker and easier. Making your grocery list after you plan out all your meals allows you to stick to the list, maybe even use some coupons, resulting in less spent. Most families have such busy schedules. school events, church events, sports, etc. Around here, starting in early spring, baseball season takes up a huge part of our week. This […]

Menu Planning

The 2015 baseball season has begun and life at our house has gone into “baseball season mode”. On school days when a game is scheduled evenings usually consist of us racing home, getting homework started, and if we’re lucky dinner before the game. Now, I don’t know about you, but as for me, trying to get a delicious and healthy dinner on the table, check homework, and make certain we have everything we need for […]

What’s in My Cooler?

What's In My Cooler

So let’s talk food…what to pack in the cooler on game days to be specific. Any mom who has spent time at a park knows the concession stand food gets tired, fast. There are only so many hot dogs, hamburgers or nachos a person can handle any given season. Plus, the cost is definitely not budget-friendly. The 40 Quart Xtreme® 4 Marine Wheeled Cooler is what I am currently using. For larger families this is […]
